Chicken with zucchini and rice

Boil the rice and sauté it with garlic.

Cut the chicken into cubes of about 2 cm.

We cut the zucchini to our taste, it can be in cubes, strips or we can make calabacetis.

Brown the chicken in a frying pan with a little EVOO.

When the meat is seared, add the zucchini, mix and add the soy sauce.

Mix everything and cover the pan so that the zucchini softens. Let it simmer for about 4 minutes approx. depending on the cut.

Once the zucchini has softened, let it cook uncovered for a couple of minutes more so that the water released by the zucchini will evaporate.
