Wakame salad with mango 🥭

The first thing to do is to boil the frozen edamame. Once the water comes to a boil, add the edamame and wait 3-5 minutes. Take them out of the water, wait a couple of minutes and we can start peeling them. Set aside.

Heat a small glass of pre-cooked basmati rice for one minute in the microwave. In the meantime, put the wakame seaweed, the diced mango, the handful of natural cashews and the peeled edamame in the salad bowl. Wakame seaweed can be found in different forms in the market, but my personal favorite is the frozen wakame from Mercadona, which takes only 2 hours to defrost.

Add the rice to the bowl, mix and sprinkle chia seeds on top. The wakame and mango already have a lot of flavor by themselves, that's why I don't usually dress this salad, however the sesame oil is great.
