Preheat the oven to 180° with air up and down.

Poach the onion in a frying pan with EVOO until it is transparent. Add the mushrooms and sauté for about 5 minutes. At the same time, put the cauliflower to cook in boiling water for 5 minutes and drain well.

Put the drained cauliflower and the sofrito in the blender/chopper, together with the eggs, milk or vegetable drink, nutmeg, pepper and salt. Process until it looks like a puree.

Pour into a baking pan lined with baking paper and bake for 45-50 minutes. Allow to cool before unmolding.
