Chickpeas with zucchini

Soak the chickpeas the night before. A handful per person. We cook them in the express pot with water, salt and the spices that we like (this time I have used cumin, other times Provencal herbs), in my case 17 minutes since the valve goes up.

In the meantime we make the vegetables. Wash the zucchini and the leek. Cut the zucchini into squares and cook it in the microwave (in a suitable container) for 7 minutes.

In the meantime, chop the garlic, onion and leek into small pieces. Add the garlic first to a frying pan with a little hot EVOO. Stir a few times and add the onion. Cook for a couple of minutes over high heat, add the leek and salt. Continue cooking for about 10 minutes over medium-high heat, stirring and making sure it does not burn. When it is to our taste add the zucchini, garlic powder and cook over high heat for 5 more minutes.

Serve the chickpeas with the vegetables and eat!
