INGREDIENTS (for 2 persons): For the sauce: - 150g natural yogurt - half a teaspoon of Dijon mustard - juice of half a lemon - 1 tablespoon vinegar - 2 tablespoons EVOO - 1 tablespoon grated Parmesan cheese For the salad: - 400g tofu - sprouts to taste - half a sweet or red onion - a few branches of raw cauliflower - a pinch of rosemary

For the sauce, we simply mix all the ingredients.

To prepare the salad, we cut the tofu into small cubes and sauté it with a dash of EVOO and a pinch of rosemary.

Julienne the onion and, optionally, the sprouts of your choice.

Mix the sprouts, onion and cauliflower florets with the sauce and add the tofu cubes on top.

To finish, we can add a little more Parmesan.
