I made the cake. I made two because I didn't know if one would give me enough but with one you can split it and it looks good. I took 5 eggs and beat the egg whites until stiff, then I added the 5 yolks and 100 whole wheat flour. I put baking paper on the tray and let it bake for 12-15 minutes at 180-190º.

I brewed a medium pot of coffee and when it was ready, I let it cool. In the meantime I put 100ml of milk to heat with the beaten yolks so that they would integrate. Then I took it off the heat, let it cool and put it back on the heat to thicken (but very little because it can get cooked and you end up with an omelet). Set aside and let it cool.

Then add the mascarpone, the cream and a spoonful of stevia and with a whisk I whirred it until it was smooth. Then I added the previous mixture.

In a blender I peeled 5 mangos with a splash of water and crushed them. I set it aside.

I started to assemble the tiramisu. I put the first layer of the sponge cake previously dipped in coffee (I split it as if it were sponge cakes) and then the mascarpone mixture on top. I repeated but this time with the mango mixture instead of coffee and then the mascarpone again.

I put cocoa powder on top and a few drops of the mango mixture and left it in the fridge for a few hours.
