We put the rice to boil (the basmati rice is looser and if it can be brown better). When it is done we drain it and pass it through cold water so that it does not become caked.

To prepare the avocado cream, simply mash the avocado with a pinch of salt, pepper and a squeeze of lemon juice.

Finally, prepare the finely chopped cherry tomatoes together with the spring onion and add vinegar and a dash of EVOO.
