- Potatoes 🥔 - Homemade organic eggs 🥚 - 100% natural beef jerky with NO ADDITIVES 🐮 - 2 President goat cheese medallions (NO ADDITIVES) 🐐 - Small cubes of 100% natural feta cheese 🧀 - 1/2 Onion 🧅 - 1 Tbsp. date paste (can be substituted with coconut sugar or whatever you normally use) - EVOO - Himalayan salt🧂

Peel and slice the potato. 2. Cook the potato in the microwave in a bowl with a good splash of EVOO and salt (the trick is to check every 6-7 minutes, turn it a few times, add a little more EVOO if necessary, cut it up with a fork and let it cook well). 3. While the onion is small, fry it in a frying pan with a little EVOO and add the date leg and a little bit of water (if you do it with sugar it is not necessary to add water). Let it caramelize and set aside. 4. Mix the potato with the beaten eggs and add salt to taste (for it to be lightly cooked it must have egg but not too much because otherwise the egg inside will be too raw). 5. Add the jerky and the diced cheeses, together with the caramelized onion and mix well.

6. Make your omelet in a pan with a little EVOO over high heat for 1 minute on each side and enjoy 😜.
