Spinach pancakes (flour and sugar free)

Add the spinach, ground flax (you can also add a little protein powder), yeast, 1/4 banana, egg yolk and a little milk and use the blender to create a kind of smoothie.

Whip the egg white and wrap it with the mixture of step 1 without eliminating the air created.

Heat a pan and put 5 pancakes in it. Add your favorite toppings (I love banana, raspberry and blueberry but you can also add chocolate chips and nuts).

Turn the heat to low and cover the pan to cook the pancakes. Wait about 10 minutes and flip them over (the smaller the pancakes, the easier it is to flip them).

Wait about 5 more minutes until they are cooked inside and ready! I like them with a little maple syrup, but you can have them plain or with other toppings!
