Wash the quinoa and soak for 3 hours.

Drain the quinoa. Wash it again and grind it with 30 ml of water and a pinch of salt. You can also add other spices to taste

In a baking pan with parchment paper, put a little EVOO and spread the dough on the parchment paper. Bake in the oven at 190C for 8-10 min.

Remove from the oven and turn the dough over. Add the ingredients to taste. In my case zucchini, mushrooms, arugula and cheese (provolone). Bake for about 10 minutes more

Note: It is advisable not to use ingredients that release a lot of water. Before adding the main ingredients I put a bed of cheese (I did not use tomatoes) and on top the zucchini slices and mushrooms previously cooked to release the water.
