Cut the onion and the blood sausage in the same way as the potatoes. In a frying pan with a drizzle of oil, fry the onion and then the blood sausage.

3. In a large bowl, beat the eggs. Add the potatoes to the mixture in the frying pan, stir and add the mixture to the beaten eggs.
