Separate the egg whites and beat them with a whisk until frothy. Add the egg yolks and the cream and mix well. Add salt and black pepper.

Heat a splash of oil in a non-stick frying pan over medium heat. Pour the mixture and separate the edges with a spatula. When the omelet is half done, add the spinach, smoked salmon and goat cheese slices to one half.

Fold the tortilla on the other side and cook for another minute to melt the cheese.
