Wash the quinoa very well and soak it in hot water for at least 30 minutes. Cover with a cloth or napkin.

Wash the quinoa again and drain it.

Whisk the quinoa with 50 ml of water and a pinch of salt.

Put parchment paper on a baking tray and spread a little EVOO on it.

Then spread the quinoa dough in as thin a layer as possible without leaving any holes. The thinner the layer, the crispier our crackers will be.

Add spices and seeds to taste.

Bake at 180° with heat up and down for 25-30 minutes. Keep an eye on it to see if it needs more or less.

Let cool and break into irregular pieces with your hands, ready to enjoy!

Tip: you can store the crackers in a tupper or airtight jar to keep them from softening or getting damp.
