Wash the quinoa well and boil it with 2 and a half parts of water for each part of quinoa. It will take about 15-20 minutes or until the liquid is absorbed. Wash it with cold water to cut the cooking time (I do it with a large strainer).

Peel and chop the vegetables, except the cherry tomatoes that we will cut in half or in four parts.

Wash the parsley and mint and chop finely. Squeeze the lemon juice.

Mix the ingredients in a bowl and season with the olive oil and a pinch of salt. Store in the refrigerator and serve cold.
