Cut the cod into large pieces, in a frying pan fry the onion with the oil, once poached add the pieces of cod, brown well and add the grated tomato.

Peel and grate the garlic, add to the sauce, add a little salt and pepper, stir and add the white wine, let the alcohol evaporate, a couple of minutes and serve. As a garnish I made some boiled potatoes with aioli and parsley.
