Yucca quesadillas

I used cassava starch/flour. In a bowl add all the ingredients and beat them with the mixer.

In a non-stick frying pan, pour a few drops of AOVE and add a ladleful of the mixture. In total there are four pancakes, that is to say, two quesadillas.

We can fill it with whatever we have at home, cooked ham, bacon, mozzarella, larded chicken...

Put a pancake back on top, add the mixture you want, cover with the other pancake and the quesadilla is ready. Turn it over so that the cheese melts and that's it!
