Pasta carbonara with zucchini and mushrooms

Heat the EVOO and add an onion to the frying pan. We wait for it to fry.

Once fried add the zucchini cut into small pieces and the mushrooms also cut into small pieces. Cook for 15 minutes over medium heat.

Cook the vegetables for 15 minutes and when they are done, add the light cream, ground black pepper to taste and a pinch of salt to taste.

Let the cream cook and thicken for about 10 minutes and our sauce is ready!

It can serve as an accompaniment to any pasta or meat. In my case I have chosen to accompany it with whole wheat spaghetti.
