Grease a frying pan with a little extra virgin olive oil.

Add the cheese slices, one next to the other. Then add the beaten egg on top and spread it all over the base of the pan.

Before the egg sets, place the slices of bread, one on top of each slice of cheese. Dip them on one side first and turn them over.

Wait for the egg to set and turn the whole thing over so that the bread is touching the pan. Fold the part of the egg that sticks out upwards so that it is inside the bread.

Add a couple of slices of tomato, cooked ham, sliced avocado and close the sandwich.
