Wash the borage and remove the leaves. Cut the stems into pieces about 4 cm long.

Heat the oil in a pot. Add the chopped garlic clove and the chopped onion, let it fry for a couple of minutes and add the water.

Add the borage, carrot, potato and leek, peeled and chopped. Add the spices to taste and the bay leaf.

Cook over medium heat until the vegetables are soft.
