Cook the couscous according to the instructions on the box and set aside to cool.

Peel and chop the tomato and cucumber, and wash and chop the bell pepper, all in small cubes. Chop the mint and cilantro.

When the couscous has cooled a little, mix everything together, add raisins and pine nuts to taste, and add a good dash of lemon and salt.
