Catalan omelette (calçots, sweet potato and potato)

First of all, start this without hunger. Otherwise you will eat the ingredients, which has happened to me. Be warned, let's get cooking!

Cut the potatoes and let them soak to release starch (I left it for two hours, but because I forgot).

In a bowl we beat five eggs with some more salt. We put all the mixture of tubers and onion and for the frying pan it goes. ☄️ Oh là là, how it smells!

Cover the pan and let it cook. When we see that it is set, we turn it over (be careful, because it is heavy 😂). Et voilà!

Now it's time to do a little dyke posturing, and enjoy it! 💃🏼

We put the calçots in the oven at 200ºC with heat up and down for about 15-20 minutes, until the white part is soft when we prick it with a fork, or until smoke starts coming out of the oven, as it happened to me. :')

Cook the potatoes in the microwave in a semi-covered tupper. I have been stopping the microwave every 5 minutes until the potato was tender (about 15 minutes). Careful here because they are very tasty and I've eaten a few of them. 😂🔫

We cut the sweet potato finely and imitate the process of the potato in the microwave.

The onion is not 100% necessary because the calçots can substitute it, but for me there is never enough onion so go ahead. 🌪 Cut the onion into julienne strips and start to poach it in the pan with one or two tablespoons of EVOO.

Take the calçots out of the oven and remove the skin (take the base with one hand and pull the central green leaves with the other). If it is not clear, look for a tutorial on youtube, because the first time is not easy. 🙅🏽♀️

We have to keep this white part of the baked calçot.

Chop the calçots with scissors and sauté them with the onion so that it caramelizes a little bit too. Add salt to taste.

To' pa'l sac. Add the potato and sweet potato to the frying pan and mix well so that it is impregnated with the flavor of the onions.
