Cod with pil pil sauce

Preparación de la receta

First we desalted the cod (since I bought it salted). I soaked it for 24 hours changing the water every 8 hours.

We put in a pan two fingers of olive oil (more or less until it covers the cod fillets).

Cut the garlic into slices (I put two garlics per piece) and add to the pan along with the cayenne.

Stir-fry everything and once they are golden brown, take them out and remove the oil from the heat to let it cool down.

We put the cod with the skin face down and we put the fire to the minimum (mine was at 3) and soon we will see how the cod begins to release its fat. The trick is to start stirring the pan in circles to emulsify the cod fat with the oil (I spent about 20 minutes).

Once we see that the cod begins to become flakes and the oil begins to thicken and create a sauce, remove from heat and add the garlic and cayenne.

Optional: once removed from the heat, I let it rest for an hour.
