Mash the bananas and add and mix well all the wet ingredients, eggs, vegetable milk, date paste, melted coconut oil and vanilla essence.

Then add the dry ingredients, the two flours, the cinnamon, the ginger and the yeast, and mix well. Finally we add the chocolate chips or pieces of chocolate so that they are distributed throughout the dough.

Pour into the mold and bake in a preheated oven at 180 degrees for about 40 minutes.

DATE PASTE: it is very simple: we pit a small box of dates (500gr) we throw them in the glass of the blender, cover with hot water flush, let hydrate, when it cools in about half an hour, we crush everything and we have the date paste. It can be stored in the refrigerator for several occasions.
