Mix the same amount of oil and water and add the flour until it has the right texture to make the empanadas.

Cut the chicken into small pieces and the onion into julienne strips, season with salt and pepper and mix well.

Shape a piece of dough into an empanada shape by rolling it into a ball and making a hole in the middle. Work it. Put it on baking paper, fill it with the chicken and onion and put a small piece of sobrassada on top and cover it with another ball of dough previously flattened with a rolling pin.

Stick a toothpick into the empanadas. Bake in the oven at 180° for about 40 minutes. Check from time to time.
