Place all ingredients in a blender and blend for one or two minutes until smooth. RESERVE the Ricotta, walnuts and honey for the topping.

Heat a pancake pan or non-stick frying pan, brush with oil or butter and ladle some of the pancake mixture into it.

When the base begins to brown and bubble, turn it over with a silicone spatula to finish cooking on the other side.

Approximately one or two minutes on each side.
