We boil the water for the rice with salt and 2 bay leaves, when it boils we add the rice and leave it for the time indicated on the package, we strain it and it is ready. And, on the other hand, in a large frying pan put 2 spoonfuls of EVOO and the cod, leave it over medium heat until it browns a little on each side and set aside.

In the same pan that we have done the fish, put 1 eggplant, 1 zucchini, 1 onion, 2 garlic, 1 red and 1 green bell pepper, cut into small pieces and seasoned with salt and pepper. Cover and leave over medium heat for about 5 minutes.

Now add to the vegetables 4-6 tomatoes (depending on size) very ripe and crushed. And let it reduce a little, about 6 minutes. After this time we put the cod on top and cover to let it finish cooking for another 6-8 minutes.
