1. In a saucepan with boiling water, add the lentil helixes to cook them. Cook for about 10 minutes.

2. While the lentils are cooking, chop the onion, zucchini and mushrooms. In a frying pan or casserole with 1 tablespoon of oil, add the chopped onion and wait for it to brown.

3. Once the onion is browned, add the zucchini and the chopped mushrooms. Stir for 5 min. Add a little cream or evaporated milk. Stir for 3 minutes and set aside.

4. Once the lentils are cooked, drain in a colander with a little water. In a dish put the lentils and add the vegetables, grated cheese and finally the pistachios (previously crushed in a mortar).
