In a bowl, mix the soy sauce, ginger, garlic and pepper.

Cut the tuna trying to get a thick rectangle, put the tuna in the liquid container for 1 hour, if the marinade does not cover the piece completely, turn it over after 30 minutes.

While the tuna is marinating, prepare the base. Cut the tomato and onion into small pieces, mix with the mashed avocado and add a squeeze of lemon juice.

Pat tuna dry and coat in sesame seeds.

In a hot frying pan sear the tuna on each side for about 1 minute. Transfer to a board and fillet with a sharp knife.

To the liquid used for marinating add the water and a spoonful of flour, and mix. Put this mixture on the heat and stir until it thickens and the sauce is formed.

To serve, place a layer of avocado mixture, some tuna fillets on top and finally some sauce.
