Peel the zucchini and cut into thin slices.

Put EVOO in a frying pan. Add 1 whole garlic clove and the zucchini slices. When the zucchini is golden brown, remove and reserve a few slices for garnish.

Cut the provolone cheese into strips.

In a food processor add the zucchini, basil, provolone cheese, parmesan cheese, 1/4 cup of EVOO and 1/2 cup of water. Blend until a thick consistency is obtained. Set aside.

Boil the spaghetti according to the manufacturer's instructions. Strain the spaghetti and reserve the cooking water.

Add the sauce in a skillet over medium heat. Add the pasta. Add a few spoonfuls of the cooking water and stir to integrate the sauce with the pasta.
