Sweet potato stuffed with couscous with vegetables and feta cheese

🔸Wash the sweet potato well and roast it in the oven at 220º for about 45 minutes or until soft.

Meanwhile, cut the vegetables in brunoise and fry them in a frying pan with 2 tablespoons of EVOO.

For the couscous: put in a saucepan the vegetable broth or water to heat with the teaspoon of turmeric and a little salt. 🔹When it starts to boil, remove from the heat, add the couscous, stir well and let stand 5 minutes. Add the sautéed vegetables.

When the sweet potato is roasted, cut it lengthwise and fill it with the couscous and vegetables. Add feta cheese on top and gratinate for 5 minutes. As a final touch, and if you like, you can add a little parsley, it adds freshness.
