PIZZA WITH ZUCCHINI AND GLUTEN-FREE BUCKWHEAT BASE 🍕🤩

Grate the zucchini and place it in a colander with a little salt for about 20 minutes so that the water is released.

2. Next, place the zucchini on a clean cloth and drain thoroughly ⚠️. It is important to remove as much water as possible to keep it crispy. ⠀

3. Beat the zucchini with the rest of the ingredients (1 egg, 2 c/s buckwheat, 1/2 c/p psyllium, handful of parmesan cheese, c/s EVOO, salt).

4. Spread the mixture in a very thin layer on the baking paper and put it in the oven (previously preheated to 180°) for 15 minutes.

5. Remove the base, turn it over, add the toppings (I have made a homemade tomato and spinach sauce, I have put cherry tomatoes, cured sheep cheese and oregano (mozzarella, roquefort...).
