Spinach, oatmeal and chia arepas

First crush the spinach with a little water (do not make it too liquid, add water little by little) to obtain an intense green color and preserve it.

Second Add the remaining dry ingredients (oat flour, oat flakes, chia and salt) to a bowl and mix with a spoon.

Add the spinach mixture little by little to the bowl with the dry ingredients already mixed, until it is a homogeneous dough. If it is too liquid you can add oat flakes and wait 10 minutes for it to absorb the liquid (tip: add the spinach little by little).

Heat a frying pan over medium heat (a little olive oil to prevent sticking).

You have two options: 1. if the dough is perfectly homogeneous, make a round shape (first a small ball and then flatten it little by little, wet your hands a little) and put it in the pan. 2. If the dough is a little sticky, put two spoonfuls in the pan and with another wet spoon, flatten it and make the shape.

5 minutes of cooking on each side. If you like them more toasted, leave about 3 more minutes on each side.

And that's it! The measurements are in quantity of 10 arepas approximately. I let them rest for 10 minutes and freeze them!

I defrost them in the micro for 2 minutes and put them in the frying pan for 3 minutes, turn and turn. If I want them more toasted, I turn up the heat and cook for 2 more minutes on each side.
