Chop the carrot, zucchini and eggplant into medium pieces. Cut the goat cheese into slices.

Heat the oil in a frying pan and place all the vegetables, cook for about 15 minutes. Preheat the oven to 180°C. Place the vegetables in a baking dish suitable for oven. Beat the eggs and place them on top of the vegetables. Finally, place the goat cheese slices on top of the vegetables and egg mixture and bake in the oven for about 15 minutes.
