Crush the bell pepper, tomato and half of the onion with a little water in a blender. It should have the texture of a gazpacho.

Heat a frying pan and pour the mixture. Let it reduce until it becomes a paste.

Meanwhile in a pot we heat olive oil (it should cover the whole base). Add the other half of the onion (cut in small pieces) and let it cook for 5 minutes.

After that time, add the tomato paste and the other bell pepper paste that we had reduced. We integrate them well with the onion and cook for 5 more minutes.

Now, in a bowl pour the rice and rinse with water until it comes out clean.

Add the rice to the pot. Add the chicken broth and half a glass of water, a bay leaf, salt and curry and thyme to taste.

Cover with aluminum foil and put a lid on top. Depending on the rice you have used you will have to cook it for more or less time, in my case the package said 10 minutes. Cook over low heat.

After the time has elapsed, remove the lid and the aluminum foil. And that's it!
