For the fajita: beat 2 eggs and put it in the frying pan with AIVE as if you were going to make a French omelette. The trick is to cover it and lower the heat until it sets and turn it over.

You can put whatever you want in the filling. I have used: 1/2 diced avocado, lettuce cut into strips and sliced tomato.

I added homemade yogurt sauce (1 plain unsweetened yogurt, dill, salt, garlic powder, a dash of lemon juice, a piece of grated cucumber).
