Vegetarian tofu meatballs with tomatoes and garnish

Meatballs: drain the tofu well, crumble it and crush it in a colander to remove all the liquid. Mix with the bread crumbs, flour, 2 eggs, garlic and finely chopped coriander. Mix well. Make small balls and fry them in a frying pan with a tablespoon of oil. Set aside.

Meatball sauce: fry the onion with the garlic for 15 minutes with a little oil and soy sauce. When it is golden brown add fried tomato, a little water and let it cook (you can add panela if you want a sweet touch). Add the meatballs and cook everything 5'.

Garnish: wash the potatoes well and slice them. Cut the peeled carrots and season with salt and pepper (in my case, paprika oil and spices: thyme). Cook in the oven/microwave, until they are soft.
