Salmon with orange sauce

Squeeze the oranges (at least 1 glass) and grate some of the peel. It is important that you use very sweet oranges to obtain a rich sauce without using sugar.

Put the juice, zest and a little grated ginger in a pan. Add less than half a glass of water. Bring to the boil.

Lower the heat to low temperature and let it boil (4 minutes approx). A crust will form on the ends of the pan.

Put the salmon loins (seasoned with salt and pepper) in the middle and cook at low temperature for 7-8 minutes. If the sauce does not cover the salmon, turn it over to cook on the other side.

Serve with vegetables and cover with ground pistachio.
