Peel and cut the peaches. Put in a saucepan over medium heat (3 of 6 in my case). Stir from time to time.

When they start to release liquid and are getting soft, help and flake with the spoon/spatula you use for turning. (⚠️ TIP: I use poached peaches and they take less time to fall apart).

With the desired texture (if you want you can grind it in the blender but I left it like this), turn off the heat and remove. Add the date paste (dates soaked 10' in hot water, crushed with a little of that water) to taste.

As an extra touch add chia seeds (⚠️it is an OPTIONAL step, but adding them and letting it rest in the fridge leaves the texture of jam).
