Start by cutting the onion into julienne strips. Put a frying pan on the heat with EVOO. Once it is hot, add the onion and brown for 5-7 minutes until it becomes more transparent.

Simultaneously, bring water to a boil to make the pasta. It usually takes 3-4 minutes, but follow the instructions on the package.

Add the shiitake also cut into thicker strips, and leave for a few minutes until it is softer.

Without removing the vegetables, we put the heura to brown it. Pour the vegetable drink/milk/oatmeal cream/coconut/etc. and the cheese into the pan.

When the liquid has reduced, add the pasta and leave for a couple of minutes more.

Serve the pasta and top with the burrata. ET VOILÀ, trés exquis!
