Clean and steam the mussels (save the water they have released).

In the same tureen add 2 tablespoons of EVOO, a whole clove of garlic, the red bell pepper, the onion, the crushed tomato, a little parsley, sweet bell pepper, a little black pepper and very little cayenne (depending on how spicy you like it). And let it all simmer for a few minutes.

Add the remaining water from the mussels and continue to simmer for a few minutes.

Add the mussels to the sauce and simmer for 15 minutes.
