First we peel the potatoes, cut them and leave them to soak.

Chop the half onion, the half chorizo and the cheese.

Bake the potatoes in the oven on one side and at the same time poach the onion in a frying pan with a little salt (to taste).

Beat the eggs and mix them in a bowl with the potatoes. Add the chorizo and cheese to the bowl.

Finally we add all this with the onion that we had to poach and make the omelet (I recommend undercooked).
