Peel and cut the vegetables: potatoes into slices, peppers into strips, onion into julienne strips.

Place the vegetables in a baking dish, together with the unpeeled garlic. Season and add EVOO.

On top of the vegetables, place the chicken thighs (you can also use thighs or ham, which I personally like better), season with salt and pepper and add a splash of cava and a few sprigs of rosemary.

Bake at 190°C for 40 minutes. After this time, turn the thighs so that they brown on the other side, leaving them for another 20 minutes at 230°C.
