In a saucepan put EVOO and a couple of broken garlic.

When the garlic is golden brown add the rice, stir a little and add the water (1 glass of rice - 2 glasses of water). Let it cook over medium heat.

To make the fried plantain, cut the plantain in four lengthwise (in half and then in half again). Put a little oil in a frying pan and add the plantain. When it browns on one side, turn it over and it's ready.

We make the fried egg in a frying pan.

Heat a little of the crushed tomato and pour it on top.
