Sea bass donostiarra style

Preparación de la receta

Preheat the oven to 200ºC and grease a baking dish with a little oil.

On a griddle, brown the sea bass on the side of the loins (skin side up) for about 3-4 minutes. Place on the baking tray upside down (skin side down). Season with salt and pepper and bake in a preheated oven for about 10 minutes.

In the meantime, finely slice the garlic cloves and cut the chili pepper into rings, discarding the seeds if we do not want it to be too spicy. In a saucepan, heat about 4 tablespoons of oil and add the garlic. Wait a couple of minutes and add the chilli. Brown over medium heat, being careful not to burn them. Remove and add a splash of vinegar, stirring the pan well to integrate it. Remove the sea bass from the oven and serve with the fried sauce and fresh chopped parsley.
