Chop an onion, half a golden apple* and two cloves of garlic. Gather them in a bowl and add 4 tablespoons of extra virgin olive oil and a pinch of salt. Mix with enveloping movements so that both the salt and the oil impregnate well the elements. *The apple helps to reduce the acidity of the tomato and adds a sweet touch without using refined sugars or sweeteners. In addition, the pectin in the apple skin will add texture to our sauce.

Add it to a frying pan and sauté until the onion is well poached.

Now add the chopped tomatoes with the skin, do not worry about it because later we will strain the sauce leaving it fine.

Add the fifth and last tablespoon of extra virgin olive oil.

Cook over medium low heat for 30 minutes stirring occasionally. Then blend with a blender or food processor.

With the help of a strainer we press with a ladle and make circular movements to strain our sauce and make it fine. If you don't mind its more rustic texture you can skip this step without any problem.

Divide into tuppers and let it cool. If you are not going to use it all, remember that you can freeze it without any problem.
