Put a saucepan with water on the fire, when it is boiling, add the frozen peas.

Meanwhile, cut the onion in brunoise and put it in a frying pan with a little EVOO until it is poached.

When the peas are ready, drain them well and put them with the onion. Add a pinch of salt and ground black pepper. Leave it for a few minutes.

Beat the eggs in a bowl and add the peas and onion. Mix well and pour into a non-stick frying pan with a little oil.

Let it cook for a few minutes and turn it until it is browned on both sides and is well curdled (I like my tortillas completely curdled, it is a matter of taste).
