Lentil curry with mango and rice

In a frying pan, poach the onion with a little oil while heating two cups of water in a saucepan.

Wash the rice and pour into the pot when it is boiling. Add salt and pepper and wait for the rice to cook 10mins over medium heat while you make the lentil curry.

When the onion is translucent, add the lentils and give it a little pass over high heat in the pan, then add half a can of coconut milk, curry, salt and pepper and leave it a couple of minutes.

Add small pieces of mango and serve.
