Wash, peel and chop the vegetables.

In a frying pan, sauté the vegetables with the oil.

On the other hand, prepare the couscous. Boil the same amount of water as couscous and add a pinch of salt.

Once the water boils, remove from the heat and add the couscous. Cover with a cloth until the grains absorb all the water and swell.

Add a little oil to the couscous and stir with a fork to loosen the grains.
