Put all the ingredients in a blender jar (here you can improvise to taste and add the spices you like: ground ginger, cinnamon...). When you have everything, beat the mixture.

Heat the frying pan over medium-high heat (e.g. 7 over 9). Add a drop of EVOO and paint the pan with a brush so as not to overdo it with oil.

Once hot, pour half of the mixture into the pan (for two pancakes like the ones in the photo) and let them cook.

When you see that you can peel off the edges but that the center is still not quite done, this is where we add the filling that we like and play with flavors (eg photo: a pancake filled with pumpkin seeds and jam and the other pancake filled with pumpkin seeds and camembert cheese).

To make them juicy on the inside, when putting the filling, wait about one minute and fold each end with the spatula and make it take the shape.

Serve on a plate and that's it!
