Wash the rice well until the water runs clear. Boil for 8 minutes with twice as much water as rice. And 5 minutes with the lid on. In total only 13 minutes should be on the fire. Strain and spread on a tray to cool. Add apple vinegar and sugar and stir. Spread again and fan with some cardboard to cool faster (you can also leave it in the fridge for 15 minutes).

It is important to have a mat to roll the maki. We open the mat vertically and put a nori seaweed. With water and ice help yourself by wetting your fingers and take rice. Put on the seaweed and spread it loosely and wet your fingers and so on. Cut your vegetables into strips and add in the center. I spread light philadelphia cheese before putting the vegetables. And then comes the rolling step. It has its technique but it is not complicated.
